The biggest difference you will notice is with sunset cruises and popular dolphin or snorkeling trips. Those are the first to go, sometimes a few days ahead during busy weeks, and even earlier around holidays or spring break. Midday trips usually give you a little more flexibility, but even those can tighten up when cruise ships are in port, or it is a holiday weekend. What I usually tell people is Key West is not really a last minute destination if you care about specific times. You can still find something, but you might not get your ideal slot if you wait too long.
