Fall is honestly one of my favorite times to fish in Destin because you have so many different options. If someone called me asking what they should target, I would first ask how long they are going out and whether they want action or a chance at a trophy fish. For most offshore trips, fall is an excellent time to target Red Snapper when the season is open, along with Triggerfish, Amberjack during its open periods, Vermilion Snapper, Scamp Grouper, and plenty of Mingo Snapper. As the water begins to cool, you also start seeing more King Mackerel moving through the area, and they can provide some really exciting action. If you are interested in trolling farther offshore, Fall is also a great time to target Mahi Mahi if conditions are right, although they become less consistent later in the season. Nearshore and in the bay, Bull Redfish become a popular target during their annual migration, and Speckled Trout fishing usually improves as the water cools. One thing I always tell visitors is not to book a charter based on one specific species because seasons and regulations can change from year to year. Instead, choose a captain who fishes every day and let them put you on whatever is biting best. The captains around Destin pay attention to water temperature, bait movement, and recent catches, so they will usually adjust the plan to give you the best chance of having a successful trip. That approach almost always leads to a better day on the water than chasing one particular fish.
