Close encounters happen, but they are not the everyday norm. Most of the time, you will see dolphins surfacing at a distance or moving alongside the boat for a short period before going on their way. When they do swim alongside the boat or ride the wake, it is a bonus because it is not guaranteed on every trip. Wake riding happens when dolphins are curious or playful, but it is entirely up to them. Visitors sometimes assume boats attract dolphins intentionally, but it is more about whether the animals choose to interact in that moment. Captains will often adjust the speed if dolphins are nearby, but they are not controlling the behavior. From a viewing standpoint, distance sightings are still very clear from a dolphin cruise boat because of the height and visibility on the water.
