Key West books up faster than a lot of other Florida beach towns. On places like Destin or Pensacola Beach, you often have more boats, more departure points, and more time slots spread out. In Key West, a lot of tours run out of a tighter area, and the boats are smaller, so once a morning or sunset time fills up, it is gone pretty quickly, especially in peak season. The biggest difference you will notice is with sunset cruises and popular dolphin or snorkeling trips. Those are the first to go, sometimes a few days ahead during busy weeks, and even earlier around holidays or spring break. Midday trips usually give you a little more flexibility, but even those can tighten up when cruise ships are in port, or it is a holiday weekend. What I usually tell people is Key West is not really a last minute destination if you care about specific times. You can still find something, but you might not get your ideal slot if you wait too long.
