There is a significant difference between summer and the slower months. During summer, especially from late May through early August, the more popular boat tours, dolphin cruises, and pontoon rentals can fill up several days ahead, and holiday weeks can book even earlier. If you already know what you want to do, I would not wait until you arrive because you may end up settling for whatever time is left instead of your preferred time. During the off season, you usually have a lot more flexibility. It is often possible to book a day or 2 ahead, and sometimes even the same day, depending on the activity and the weather. My advice is to secure your main activity before your trip if you are visiting during the busiest months, then leave the rest of your schedule open. That way, you know you have the experience you really wanted, but you still have plenty of freedom to decide everything else once you get here.
