Around Santa Rosa Beach, the beach accesses, restaurants, and roads can get pretty crowded, so I usually recommend making the water your main activity instead. A dolphin cruise, a sightseeing boat tour, or even a pontoon rental gives you a chance to get away from a lot of that congestion. Once you are out on Choctawhatchee Bay, it feels much more open, and even though there are other boats around, it rarely feels as crowded as the roads or public beaches. I also like planning those activities earlier in the day or later in the afternoon, then leaving the middle of the day for lunch or some time back at your rental. That keeps you from spending your vacation sitting in traffic or waiting in long lines. I have seen plenty of families visit over holiday weekends and still have an amazing time just because they kept their plans flexible instead of trying to squeeze in every attraction.
