You can build a full couple of days just staying in a tight radius. Most resorts and condos in that area already have beach access right there, so your default plan can just be to walk down, set up on the sand, and spend as much time there as you want without getting in a car at all. Then, when you want to mix it up, you can add one water activity that leaves right nearby, such as a dolphin cruise or a short bay boat tour out of Sandestin or the surrounding marinas. Those trips usually handle everything for you, so you are not driving somewhere new and figuring out parking all over again. You also have food and shops built into Sandestin and nearby spots, so you can just walk or take a quick shuttle, depending on where you are staying. A lot of people end up going to the beach in the morning, having lunch nearby, and then taking a sunset walk or boat ride without ever leaving the immediate area.
