If spending as much time on the water as possible is your goal, I would look beyond the shorter sightseeing trips and book something that lets the water be the main part of your day instead of just 1 stop along the way. A pontoon rental is probably the best choice because you can stay out for several hours, cruise through the creeks and broad waterways, stop whenever you feel like it, and simply enjoy being on the water without following a fixed schedule. If you would rather not drive the boat yourself, a private charter is another great option since the captain can tailor the trip to your group and spend more time cruising instead of sticking to a preset route. Kayaking is also worth considering if you like a slower pace because you can spend a couple of hours exploring the salt marshes and quiet creeks where there is often plenty of wildlife to watch. Standard dolphin cruises are a great introduction, but they are usually shorter and follow a planned route, so they do not give you that same feeling of spending most of the day on the water. From what I have seen over the years, the people who come back talking about how relaxing their day was are usually the ones who chose an activity with plenty of flexibility instead of trying to fit several shorter tours into the same afternoon.
