If you are planning to eat your catch while you are in Destin, I might think twice about having the mates fillet your fish. While it's very common and convenient to have them do it for you, they tend to do it really fast and leave a lot of meat on the bone. If you have the time and large enough coolers, go to Sextons seafood market which is nearby the harbor and pay to have them to do it (usually about $20 or so). I typically get about 25% more meat and less bones. Especially if you catch amazing fish like red snapper and grouper, you'll want to keep as much as you can.
