Captains are tuned in to how fast Gulf weather can shift, so they are not just reacting last minute. They are watching conditions the whole time, from before you even leave the dock. If the wind starts picking up while everyone is already on the island, the first thing they usually do is start communicating return timing early instead of waiting. You will hear them come around or make announcements telling people the wind is building and giving a slightly earlier heads up than planned so nobody is scrambling at the last second. If it is just a normal afternoon wind increase, they just adjust the return ride, maybe slow things down a bit on loading or shift the pickup spot to a more sheltered side so the boat is easier and safer to board. They will also time departures so groups are not getting slammed by the roughest chop at the same moment. If the weather actually starts turning stronger, like sustained wind or storm activity, they will sometimes shorten the stay and pull everyone back sooner.
