I would show up about 30min early for a jet ski rental, and maybe closer to 45min early if it is summer, a holiday week, or if anyone in your group still needs to handle paperwork. The ride itself may only be 1hr, but before you get on the water, you still have to park, find the check in spot, show IDs, sign waivers, get fitted for life jackets, go over the safety briefing, and make sure every driver has the boating requirement handled if it applies. Parking can be another issue in Destin because some marinas and harbor areas get packed, and walking from the car with kids, towels, dry bags, and everyone asking where to go can take longer than people expect. I would not cut it close because most rental companies are running back to back reservations, especially in peak season. Give yourself enough time to ask questions, understand the riding area, and use the bathroom.
