Key West dolphin tours are more focused on the Gulf of Mexico side and backcountry waters for the dolphin watching part of the trip. That is where boats search around quieter island areas and natural dolphin habitat. Some combo trips, like the Catamaran Dolphin & Snorkel Tour, continue toward reef areas afterward for snorkeling, but the dolphin portion is generally tied to the Gulf side rather than the Atlantic side.
